Fabulous Favorite Friday

Happy Friday everyone. Today is going to be a busy day for us. Dh's grandmother's funeral is this afternoon so we will be with his family. Please keep us in your thoughts and prayers. They are having a grave side service and it is supposed to be in the 90's. Also, this is falling right at my little guy's nap time and dh wants him to go to the funeral, so that will be a challenge. I am just hoping everything goes well.
As I mentioned in an earlier post, I have a coconut pie recipe that dh's granny loved. I've made this recipe to take to dh's aunt and uncles for after the funeral. Not only did dh's granny love this pie, but the rest of his family likes it a lot too. I thought I'd share it with y'all. I got this recipe from a dear neighbor who lived right behind us when I was growing up. She was like a grandmother to my sister and I. She has always been a great cook and I've gotten some great recipes from her over the years.
Anne's Coconut Pie
1 1/2 cups sugar
2 unbaked deep dish pie shells
2 tablespoons flour
1/4 cup margarine (1/2 stick)
4 eggs, slightly beaten
1 cup milk
1 1/2 teaspooons vanilla
1 small can or a bag of shredded coconut
Mix flour & sugar. Stir in margarine. Add eggs, milk, vanilla, & coconut. Bake at 350 degrees for 30-35 minutes or until brown on top. (I baked mine for about 40 minutes). These pies are great when you need to make something quick and easy and they are always a hit.
Today's Fabulous Friday pick is the show Last Comic Standing. It comes on Thursday nights at 8:00 p.m. on NBC. After a long week, I enjoy watching this show and laughing a little bit. I've watched this show every summer for the last few years. I find it interesting to watch how creative some of the comics are with the different challenges they are presented. I appreciate comics who have clever humor as opposed to those that go straight for the crewd and lewd jokes. As of right now, I'm not quite sure which one will end up in the finale. But, with summer being a slow tv time, this is one show that helps pass away the summer.
