Hey y'all. Happy Monday and Happy St. Patrick's Day! I hope that today is a lucky day for you full of four leaf clovers, parking spaces close to the door, and green lights (hey pretty clever sliding that one in with the green and all - LOL).
We are sporting the green around here. We aren't Irish, but we think it is fun to celebrate. I'd like to give a shout out to my Bunco Pal, Greta who really is from Ireland. So, we'd like to wish that lass a Happy St. Patty's Day. Have a Guiness for us!
I'm hoping to come up with something clever for dinner to celebrate. I found this recipe on the Food Network for Shepherd's Pie, so maybe I'll take a chance and try to make it. I found it on the Food Network website and it is one of Rachael Ray's 30 minute meal recipes. That sounds right up my alley so I don't have to make something too complicated. I also like this recipe because I can use ground beef as opposed to lamb. I like lamb, I grew up eating it because my grandmother was from England and used to cook it for Easter.
